While the skillet is heating, prepare the potatoes. Toss sliced fingerling potatoes, Rosemary leaves, and minced garlic with olive oil, then season with seasoned salt and garlic powder, tossing again.

  • 1 1/2 lb fingerling potatoes cut in half lengthwise
  • 3-4 cloves of garlic minced
  • 2-3 sprigs of rosemary removed from stem
  • Olive oil
  • Seasoned salt
  • Garlic powder

Instructions

  • Start smoker and set heat to high. My smoker gets up to roughly 425°. Place large cast iron skillet on your smoker to preheat.
  • Toss sliced fingerling potatoes, Rosemary leaves, and minced garlic with olive oil, then season with seasoned salt and garlic powder.
    1 1/2 lb fingerling potatoes, 3-4 cloves of garlic, 2-3 sprigs of rosemary, Olive oil, Seasoned salt, Garlic powder
  • Once the cast iron skillets is hot, drizzle more olive oil on. Place potatoes into the skillet, skin side up. Cook for about 15 minutes upon high, then stir potatoes.

  • Reduce heat to 250° and smoke another 15 minutes, or until potatoes are fork tender. Serve hot right out of the smoker.
