Start by getting your smoker going and set for high temperature. My smoker gets up to 425 degrees. Once your smoker is at the correct temperature place a heavy-duty cast iron skillet on, allowing it to heat up.
While the skillet is heating, prepare the potatoes. Toss sliced fingerling potatoes, Rosemary leaves, and minced garlic with olive oil, then season with seasoned salt and garlic powder, tossing again.
Once the cast iron skillet is hot, drizzle with olive oil. Place potatoes into the skillet, skin side up. Cook for about 15 minutes on high, then stir potatoes. Reduce the heat to 250 degrees and allow the potatoes to cook until fork tender. Serve immediately, and enjoy!
Crispy smoked fingerling potatoes
- 1 1/2 lb fingerling potatoes cut in half lengthwise
- 3-4 cloves of garlic minced
- 2-3 sprigs of rosemary removed from stem
- Olive oil
- Seasoned salt
- Garlic powder
- Start smoker and set heat to high. My smoker gets up to roughly 425°. Place large cast iron skillet on your smoker to preheat.
- Toss sliced fingerling potatoes, Rosemary leaves, and minced garlic with olive oil, then season with seasoned salt and garlic powder.1 1/2 lb fingerling potatoes, 3-4 cloves of garlic, 2-3 sprigs of rosemary, Olive oil, Seasoned salt, Garlic powder
- Once the cast iron skillets is hot, drizzle more olive oil on. Place potatoes into the skillet, skin side up. Cook for about 15 minutes upon high, then stir potatoes.Olive oil
- Reduce heat to 250° and smoke another 15 minutes, or until potatoes are fork tender. Serve hot right out of the smoker.
